Rich and fudgy brownies made with black beans, offering a healthier twist on the classic dessert without compromising on flavor or texture. These brownies are decadent, moist, and packed with a deep chocolate flavor.

  • 1 can (15 oz) black beans, drained and rinsed
  • 2 large eggs
  • 1/4 cup melted coconut oil or butter
  • 1/4 cup cocoa powder
  • 1/2 cup brown sugar or maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup dark chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
  2. In a food processor or blender, combine the black beans, eggs, melted coconut oil (or butter), cocoa powder, brown sugar (or maple syrup), vanilla extract, salt, and baking powder. Blend until smooth and well-combined.
  3. Pour the batter into the prepared baking pan and spread it evenly.
  4. If using, sprinkle chocolate chips on top of the batter and lightly press them in.
  5. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the brownies cool in the pan before cutting into squares.
