Funfetti meets brunch in this celebratory birthday cake French toast—soft slices of sweet, sprinkle-studded bread are dipped in a vanilla custard, griddled to golden perfection, and finished with a drizzle of icing and whipped cream for a party on your plate.

Ingredients

Units Scale
  • 6 slices brioche or thick white bread
  • 3 large eggs
  • 1/2 cup whole milk
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • 1/4 cup rainbow sprinkles (plus extra for garnish)
  • 2 tablespoons butter (for cooking)
  • 1/2 cup powdered sugar
  • 1 tablespoon milk (more as needed)
  • 1/4 teaspoon vanilla extract (for glaze)
  • Whipped cream
  • Extra sprinkles

Instructions

  1. In a medium bowl, whisk together eggs, milk, sugar, vanilla, and almond extract until smooth.
  2. Stir in the sprinkles gently to avoid color bleeding.
  3. Dip each slice of bread into the mixture, coating both sides well.
  4. Heat a skillet over medium heat and melt butter. Cook the soaked bread slices for 2–3 minutes per side until golden brown and crisp.
  5. For the glaze, whisk powdered sugar with milk and vanilla until smooth. Adjust consistency as needed.
  6. Drizzle glaze over the cooked French toast, top with whipped cream, and finish with more rainbow sprinkles. Serve warm.

Notes

  • Use day-old brioche for best texture and soaking.
  • Add sprinkles just before dipping to prevent color bleeding.
  • Try using flavored extracts like cake batter or maple for a twist.
  • Serve immediately for the freshest taste and best texture.
