  • 1 1/2 pounds fresh strawberries
  • 2 teaspoons lime zest
  • 1 tablespoon lime juice
  • 2 to 4 tablespoons confectioners’ sugar (adjust to taste)

Instructions

  1. Crush the Meringue:
    Place meringue cookies in a resealable plastic bag and gently crush using a rolling pin—aim for a mix of fine crumbles and larger chunks.

  2. Prep the Strawberries:
    Trim and hull the strawberries. Slice or quarter 1 pound and mash or blend the remaining ½ pound into a chunky purée.

  3. Mix the Berries:
    Combine sliced strawberries and purée in a bowl. Add lime zest, lime juice, and 2–3 tablespoons of confectioners’ sugar (to taste). Toss gently to combine. Set aside.

  4. Whip the Cream:
    In a separate large bowl, beat the cold heavy cream with 1 tablespoon confectioners’ sugar until stiff peaks form.

  5. Fold in Meringue:
    Gently fold in the crushed meringue pieces into the whipped cream, taking care not to deflate it.

  6. Assemble the Dessert:
    In glasses or jars, layer the strawberry mixture with the whipped cream and meringue, repeating until full. Finish with a spoonful of berries on top.

  7. Serve:
    Serve immediately for the softest texture, or chill briefly for a slightly firmer dessert.
