A soft, buttery coffee cake studded with fresh berries and topped with a crumbly streusel, perfect for enjoying with a cup of coffee or as a sweet breakfast treat.

  • 1 teaspoon baking powder

  • 1/2 cup unsalted butter, softened

  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup fresh mixed berries (blueberries, raspberries, blackberries)
  • For the streusel topping:
  • 1/2 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, cold and cubed

Instructions

  1. Preheat the oven to 350°F (175°C). Line a muffin tin or mini loaf pans with cupcake liners.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat together the softened butter and granulated sugar until light and fluffy. Add the egg and vanilla extract, and continue to beat until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream, mixing until just combined.
  5. Gently fold in the fresh berries, being careful not to crush them.
  6. Spoon the batter evenly into the muffin cups or mini loaf pans.
  7. To make the streusel topping, combine the flour, sugar, brown sugar, cinnamon, and cold cubed butter in a bowl. Use a pastry cutter or your fingers to work the butter into the dry ingredients until a crumbly texture forms.
  8. Sprinkle the streusel topping generously over the batter in each muffin or loaf pan.
  9. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool slightly before serving.
