Crispy tortilla chips loaded with tender BBQ brisket, melted cheese, and fresh toppings—this ultimate game-day snack is perfect for Father’s Day!

Ingredients

For the Nachos:

  • 1 bag tortilla chips
  • 2 cups shredded cheddar cheese
  • 1 cup Monterey Jack cheese
  • 2 cups smoked brisket, shredded
  • 1/2 cup BBQ sauce

For the Toppings:

 

  • 1/2 cup pico de gallo
  • 1/4 cup red onion, diced
  • 1/4 cup corn kernels
  • 1/4 cup sour cream (optional)
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, sliced (optional)

Instructions

  • Preheat the oven to 375°F (190°C).
  • Spread tortilla chips evenly in a cast iron skillet or baking sheet.
  • Layer with shredded cheddar and Monterey Jack cheese.
  • Toss shredded brisket in BBQ sauce and evenly distribute over the chips.
  • Bake for 10-12 minutes, until the cheese is melted and bubbly.
  • Remove from the oven and top with pico de gallo, red onion, corn, jalapeños, and fresh cilantro.

 

  • Drizzle with sour cream if desired and serve warm!

Notes

  • For extra crunch, lightly toast the tortilla chips in the oven before adding toppings.
  • Swap out brisket for pulled pork or shredded chicken for variety.
