Banana Cake:
1 1/2cups mashed ripe bananas (about 3 bananas)
2cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2cup unsalted butter, softened
1/2cup granulated sugar
1/2cup brown sugar
2 large eggs
1/2cup sour cream
1 tsp vanilla extract
Chocolate Frosting:
1/2cup unsalted butter, softened
1/2cup cocoa powder
2cups powdered sugar
1/4cup milk (more if needed)
1 tsp vanilla extract
Topping (Optional):
Banana slices
Chocolate syrup drizzle
Instructions
Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking dish.
In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
In a large bowl, cream butter with granulated sugar and brown sugar until light and fluffy.
Beat in eggs, one at a time, then stir in sour cream, mashed bananas, and vanilla.
Gradually add dry ingredients to wet, mixing just until combined.
Pour batter into prepared pan and bake for 30–35 minutes or until a toothpick inserted comes out clean. Let cool completely.
For the frosting, beat the butter until creamy. Add cocoa powder, powdered sugar, milk, and vanilla. Beat until smooth and fluffy.
Spread frosting over cooled cake. Garnish with banana slices and a drizzle of chocolate syrup before serving.
Notes
Use ripe bananas for best flavor and natural sweetness.
Let the cake cool completely before frosting to prevent melting.
Frosting consistency can be adjusted with a splash more milk if needed.
Garnish with bananas just before serving to avoid browning.
