Ingredients

  • 6 slices soft white or brioche bread, crusts removed
  • 2 ripe bananas, mashed
  • 1 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 2 eggs

  • Powdered sugar, for dusting

Instructions

  1. Use a rolling pin to flatten each slice of bread.
  2. Spread mashed banana onto each slice, then roll tightly into logs.
  3. In a shallow bowl, whisk together eggs, milk, cinnamon, and vanilla extract.
  4. Dip each roll-up into the egg mixture, coating all sides evenly.
  5. Heat butter in a nonstick skillet over medium heat.
