A stunning side dish featuring tender, caramelized butternut squash slices baked to perfection and served over a creamy, tangy feta dip. The perfect combination of sweet, savory, and creamy flavors!

For the Roasted Butternut Squash:

  • 1 medium butternut squash (peeled and thinly sliced)
  • 2 tablespoons olive oil
  • 1 teaspoon honey or maple syrup
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 teaspoon fresh thyme or chopped parsley

For the Feta Dip:

  • 1 cup feta cheese (crumbled)
  • 1/2 cup Greek yogurt
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • 1 garlic clove (minced)
  • 1/2 teaspoon black pepper

Instructions

  • Preheat & Prep:

    • Preheat oven to 400°F (200°C).
    • Line a baking sheet with parchment paper.
  • Roast the Butternut Squash:

    • In a bowl, toss the butternut squash slices with olive oil, honey, salt, black pepper, and red pepper flakes.
    • Arrange the slices in an overlapping pattern on the baking sheet.
    • Bake for 25-30 minutes, until golden and tender.
  • Prepare the Feta Dip:

    • In a blender or food processor, blend feta cheese, Greek yogurt, olive oil, lemon juice, garlic, and black pepper until smooth and creamy.

 

  • Assemble & Serve:

    • Spread the feta dip onto a serving platter.
    • Arrange the roasted butternut squash over the dip.
    • Garnish with fresh thyme or parsley.
    • Serve warm and enjoy!
