Instructions

  1. Prepare the cranberry sauce: Combine cranberries, sugar, orange juice, and rosemary in a medium saucepan. Bring the mixture to a boil over medium-high heat, then reduce to a simmer. Cook for 10-12 minutes, stirring occasionally, until the cranberries burst and the sauce thickens slightly. Remove from heat and set aside warm.
  2. Season and wrap the brie: Pat the brie dry with a paper towel. Lightly sprinkle both sides with salt and freshly ground black pepper. Place the brie in the center of the thawed puff pastry sheet. Fold the pastry over the brie to enclose it completely, sealing the edges by pressing and trimming any excess pastry. Brush the entire pastry surface with the beaten egg to achieve a golden finish when baked.
  3. Bake the brie: Transfer the wrapped brie onto a baking sheet lined with parchment paper. Bake in a preheated oven at 400°F (200°C) for 12-15 minutes, until the puff pastry is golden and crisp and the brie inside is softened and bubbling.
