Australian Curried Sausages is a classic comfort dish, featuring juicy sausages simmered in a rich, flavorful curry sauce with potatoes, carrots, and peas.   • 6 beef or pork sausages
  • 1 tablespoon olive oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1/2 cup frozen peas
  • 2 tablespoons curry powder
  • 1 tablespoon tomato paste
  • 2 cups beef stock
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon sugar
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • Salt and pepper to taste
  • Cooked rice, for serving

Instructions

  • Brown the Sausages: Heat olive oil in a large pan over medium heat. Brown the sausages on all sides, then remove and slice into chunks.
  • Sauté the Vegetables: In the same pan, sauté onion and garlic until softened. Add sliced carrots and diced potatoes, cooking for another 3 minutes.
  • Add Spices & Tomato Paste: Stir in curry powder and tomato paste, cooking for 1 minute until fragrant.
  • Simmer the Sauce: Pour in beef stock, Worcestershire sauce, and sugar. Add the sausages back to the pan and bring to a simmer.
  • Cook Until Tender: Cover and cook for 15 minutes, stirring occasionally. Add the peas and cook for another 5 minutes.
  • Thicken the Sauce: Stir in the cornstarch slurry and cook until the sauce thickens. Season with salt and pepper to taste.
  • Serve: Enjoy hot over cooked rice.

  • Swap beef stock for vegetable stock for a lighter version.
  • Use chicken or turkey sausages for a leaner option.
