2 medium apples, peeled, cored, and finely diced
1/4cup granulated sugar
1/2 teaspoon ground cinnamon
Pinch of ground nutmeg
2 tablespoons unsalted butter, melted
1 tablespoon cornstarch
1 tablespoon lemon juice
Instructions
In a large bowl, cream together softened butter and cream cheese until smooth.
Gradually add the flour, mixing until a soft dough forms.
Wrap the dough and refrigerate for 30 minutes.
Preheat oven to 350°F (175°C) and lightly grease a mini muffin pan.
In a medium bowl, mix diced apples with sugar, cinnamon, nutmeg, melted butter, cornstarch, and lemon juice until evenly coated.
Divide the chilled dough into 24 equal portions. Roll each into a ball and press into a mini muffin cup, shaping into tart shells.
Spoon apple filling into each tart shell, filling nearly to the top.
Bake for 20–25 minutes, or until the crusts are golden and filling is bubbly.
Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Use tart apples like Granny Smith for a more balanced flavor.
Chilling the dough helps with easier shaping and prevents shrinkage.
