A cozy hybrid of two classic desserts—this apple pie cake combines cinnamon-spiced apples with a moist, buttery cake base and a light dusting of powdered sugar. A perfect treat for autumn or anytime comfort food is calling.

Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1/2 cup milk
  • 3 large apples, peeled, cored, and sliced
  • 2 teaspoons cinnamon
  • 1/4 cup brown sugar
  • Powdered sugar, for dusting (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream together butter and sugar until pale and fluffy.
  4. Add the egg and vanilla extract, beating until fully combined.
  5. Gradually incorporate the flour mixture into the wet ingredients, alternating with milk. Start and end with the flour mixture. Mix until just combined.
  6. In another bowl, toss the sliced apples with cinnamon and brown sugar until evenly coated.
  7. Spread half of the cake batter into the prepared pan. Layer with half of the apple mixture.
  8. Spread the remaining batter over the apples, then top with the remaining apple slices.
  9. Bake for 40–45 minutes or until a toothpick inserted in the center comes out clean.
  10. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  11. Dust with powdered sugar before serving, if desired.

Notes

  • Use a mix of tart and sweet apples for a more complex flavor.
  • Make sure apples are evenly sliced to ensure even baking.
  • This cake pairs beautifully with a scoop of vanilla ice cream or a dollop of whipped cream.
