Golden and flaky apple hand pies filled with a warm cinnamon-spiced apple filling. Perfect for fall and holiday baking, these individual pies make a cozy, portable treat packed with homemade flavor.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 tsp salt
  • 1 tbsp granulated sugar
  • 1 cup cold unsalted butter, cubed
  • 68 tbsp ice water
  • 2 cups diced apples (peeled, any variety)
  • 1/4 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tbsp all-purpose flour
  • 1 tbsp lemon juice
  • 1 egg (for egg wash)
  • 1 tbsp milk
  • Additional sugar for sprinkling (optional)

Instructions

  1. In a large bowl, whisk together flour, salt, and sugar. Cut in cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  2. Gradually add ice water, mixing just until dough comes together. Divide dough into two discs, wrap in plastic, and refrigerate for at least 1 hour.
  3. In a medium bowl, combine diced apples, granulated sugar, brown sugar, cinnamon, nutmeg, flour, and lemon juice. Stir to coat evenly and set aside.
  4. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  5. Roll out chilled dough on a floured surface to about 1/8-inch thick. Use a round cutter to cut circles.
  6. Place half the dough circles on the baking sheet and add 1–2 tablespoons of apple filling to each center.
  7. Top with remaining circles, crimp edges with a fork, and cut slits in the top for steam to escape.
  8. Beat egg with milk and brush over each hand pie. Sprinkle with extra sugar if desired.
  9. Bake for 20–25 minutes, until golden brown. Cool slightly before serving.

Notes

  • Use a mix of apple varieties for depth of flavor—Granny Smith and Honeycrisp work well together.
  • Chill the assembled pies briefly before baking to help them hold their shape.
  • Leftover pies can be stored at room temperature for 1–2 days or refrigerated for longer freshness.
  • Serve with vanilla ice cream or caramel sauce for an extra indulgent treat.
