Instructions
Preheat Oven: Preheat oven to 425 degrees F.
Prepare Pan: Line regular size muffin tin with papers, or spray with baking spray.
Mix Dry Ingredients: In one bowl, stir together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
Mix Wet Ingredients: In a separate bowl, whisk together the apple butter, brown sugar, oil, eggs, and vanilla until blended.
Combine: Dump the wet ingredients into the bowl with the dry ones, and use a spatula or wooden spoon and mix just until combined.
Rest Batter: Let batter sit 10 minutes.
Fill Muffin Cups: Use a scoop or spoon and fill muffin cups almost to the top.
Add Topping: Sprinkle with the chopped walnuts.
Bake: Bake for 7 to 8 minutes, then reduce the temperature to 350 degrees F. and bake another 12 to 13 minutes or until a cake tester inserted into the center of the muffins comes out cleanly.
