Ingredients

Scale
  • 6 large eggs
  • 1/4 cup milk (dairy or non-dairy)
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup diced bell pepper
  • 1/4 cup chopped spinach
  • 1/4 cup cooked bacon or ham (optional)
  • Salt and black pepper, to taste
  • 1 tablespoon chopped green onions (for garnish)
  • Non-stick cooking spray

Instructions

  1. Preheat your air fryer to 300°F (150°C).
  2. In a large mixing bowl, whisk together eggs, milk, salt, and pepper until smooth and fluffy.
  3. Fold in shredded cheese, bell pepper, spinach, and cooked bacon or ham (if using).
  4. Lightly spray silicone muffin molds or ramekins with non-stick spray and evenly divide the mixture among them.
  5. Place the molds carefully into the air fryer basket.
  6. Air fry for 10–13 minutes, or until the egg bites are fully set and slightly golden on top.
  7. Let cool slightly before removing from molds.
  8. Garnish with chopped green onions and serve warm.

Notes

  • Silicone molds work best for easy release.
  • Customize with your favorite mix-ins such as mushrooms, tomatoes, or feta cheese.
  • These egg bites store well in the fridge for 3–4 days and can be reheated in the microwave or air fryer.
  • Great for meal prep and grab-and-go breakfasts.
