Ingredients

Scale

Chicken

  • 1 lb boneless skinless chicken breasts, cut into bite-sized pieces

Sauce

  • 6 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp dried Italian herbs
  • Salt and freshly ground black pepper to taste

Additional

  • 1 lb potato gnocchi
  • Fresh basil leaves for garnish

Instructions

  1. Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the bite-sized chicken pieces, season with salt, pepper, and dried Italian herbs. Cook for 6-8 minutes until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  2. Sauté Garlic: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant, taking care not to let it burn to avoid bitterness.
  3. Deglaze the Skillet: Pour in the chicken broth and use a wooden spoon to scrape up the browned bits from the bottom of the skillet – these add great flavor to the sauce.
  4. Cook Gnocchi: Add the potato gnocchi to the skillet and bring the mixture to a simmer. Cook for 3-4 minutes, stirring occasionally, until the gnocchi starts to become tender.
  5. Add Cream and Simmer: Reduce heat to medium-low and pour in the heavy cream. Stir gently to combine and let the sauce simmer for 2-3 minutes until it thickens slightly.
  6. Combine Chicken and Cheese: Return the cooked chicken to the skillet and add the grated Parmesan cheese. Stir until the cheese melts and the chicken is warmed through.
  7. Season and Serve: Taste and adjust seasoning with salt and pepper as needed. Garnish with fresh basil leaves before serving.

Notes

  • For a lighter version, substitute heavy cream with half-and-half or milk.
  • For gluten-free options, use gluten-free gnocchi checked carefully on packaging.
  • Be careful not to burn garlic as it can turn bitter and spoil the flavor.
  • Make sure chicken is cooked fully through to ensure food safety.
