Instructions

  1. Prepare the Pan: Line a small sheet pan with parchment paper and lightly brush it with extra virgin olive oil to prevent the candy from sticking.
  2. Toast Sesame Seeds: Place the untoasted sesame seeds in a nonstick pan over medium heat. Stir continuously with a wooden spoon until the seeds become golden brown and start to gleam, about 3-4 minutes. Transfer the toasted seeds to a plate to cool.
  3. Warm the Honey: Return the empty pan to medium heat and pour in the honey. Stir continuously as it warms up and begins to bubble, reaching approximately 250°F, boiling for around 3-4 minutes to caramelize lightly.
  4. Combine Seeds and Honey: Carefully add the toasted sesame seeds back into the pan with the boiling honey. Stir constantly for about 5 minutes to ensure even coating and blending.
  5. Shape the Candy: Quickly pour the honey and sesame seed mixture onto the prepared sheet pan. Spread it evenly using a spatula or flatten with parchment paper or a rolling pin to your desired thickness.
  6. Cool and Cut: Allow the candy to cool and set for about 20 minutes. Once firm, use a sharp knife to cut it into small rectangular bars or squares.
